White Chocolate Macadamia Cookies

Why I Like It: I used to buy them through Market Day at Aidan’s school, until I came up with this recipe. See my blog entry for Doug’s favorite Oatmeal Raisin cookies and my favorite Chocolate Chip Coffee cookies.
Ingredients:
1 1/4 cup (2 1/2 sticks) butter, softened
1 1/3 cups sugar
2/3 cup dark brown sugar, packed
2 eggs
1/2 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/8 teaspoon salt
1 cup macadamia nuts, chopped
1 cup white chocolate chips
Directions:
Preheat oven to 325 degree. Grease cookie sheets or cover with parchment paper.
Beat butter, sugar, and brown sugar on medium speed until well blended. Beat in one egg at a time. Stir in vanilla. In a separate bowl, mix together flour, baking soda and salt. Stir into sugar, butter and egg mixture just until combined. Stir in nuts and white chocolate chips until mixed through.
Drop by measuring teaspoons 1 1/2 inches apart on prepared cookie sheets. Bake one sheet at a time, until the cookies are golden brown, about 20 - 25 minutes. Remove the sheet to a rack and let stand until the cookies firm up slightly. Transfer the cookies to racks to cool.
