Baked Pasta and Chicken Gratin

Why I Like It: It is simply a tasty and easy one-pot-meal!

Ingredients:
2 cups chicken broth
3 garlic cloves, minced
1 cup orzo or other small pasta
3 tablespoons olive oil
1 medium onion, diced
2 medium zucchini, diced
1 teaspoon dried oregano
1/4 teaspoon salt
1/2 teaspoon black pepper
1/2 pound chicken breast, sliced
1/2 cup swiss cheese, shredded
1/2 cup mozzarella cheese, shredded
1/8 cup fresh parsley
1 tablespoon dry bread crumbs
1 tablespoon parmesan cheese, shredded

Directions:
Cook the pasta in chicken broth and half the garlic, according to the time on the box. Remove from heat. Do not drain.

In another skillet, stir-fry the remaining garlic and onions in 1 tablespoon of olive oil until translucent. Add zucchini, oregano, salt and pepper. Saute until desired tenderness. Remove from skillet and set aside.

Add chicken to skillet and cook until done. Return veggies to skillet. Add cooked pasta mixture, cheeses and parsley. Toss until mixed through. Turn into baking dish.

Toast bread crumbs then combine with parmesan cheese. Sprinkle bread crumb mixture over the dish and drizzle with 1 tablespoon of olive oil. Broil for 3-5 minutes until browned on top.
